ThEsE ArE noT your moThEr’s CookBooks Chefs Jonny Roberts, of Bolero Brasserie, and Livio Ferigo, of Bone Fish Bar & Grill and Café Amici, have a few things in common: They’re both award-winning culinary mainstays in Bermuda, owners of wildly popular restaurants, and master cooks who have experienced their share of challenges, trials by fire and success against the odds. In their new cookbooks, both men go beyond their food to offer a personal account of their paths to gastronomic stardom. In fact, in Amore Bermuda – The Passion for Italian Cooking, Chef Ferigo doesn’t even get into the recipes until page 116. His book is a Dickensian account of a boy who began bottling wine and washing dishes at age 11 at a hotel in Cortina d’Ampezzo and found himself working in the kitchen of a five-star resort at age 14. Candid, boisterous and full of personal anecdotes, the chef recounts his move to Bermuda in 1994, and the opening of his first restaurant, Monte Carlo, in 1999, when he was just 24. Sprinkled throughout the narrative are around 80 Italian recipes and a colourful cast of Italian and Bermudian characters. Chef Roberts takes a similar approach with Chefs Don’t Feel Pain. The title — the mantra of a chef for whom he once worked — sets the table for a blunt, humorous and reflective account that Chef Roberts warns “is not for the faint-hearted.” The book delves into the inner workings of Bolero Brasserie, a restaurant that has earned “Best of Bermuda” accolades for five years, and also promises to reveal the secrets behind its success. The two books offer unique insights into the art and love of food, and the maddening, exhilarating, and ultimately rewarding journeys of two chefs who rose from humble roots to fulfil their dreams in Bermuda.
