ARTISAN SEA SALT BRINGS A GOURMET EXPERIENCE TO BERMUDA. Forget the periodic table of elements; salt is — and should be — so much more than that. With the right amount, taste and texture, it can make or break a meal. And Matt Hooper is making sea salt a reality in Bermuda. The first time Hooper tried to make salt, he wasn’t interested in pursuing it as a living. After all, he wasn’t living in an area that made it practical. He needed lots of space, and that was one thing that he simply didn’t have. “There is a lot more to it than leaving some water in the sun,” he notes. In 2012, Hooper tried again, and was finally successful with the result. He hasn’t stopped creating it since. “Our salt is very light and fluffy,” Hooper says, “like snow you can crumble in your fingers without even trying. We have a proprietary process that took hundreds and hundreds of hours to perfect.” With the assistance of his father, who helped him from the very first bucket of water, Artisan Sea Salt is on the path to becoming a household name in Bermuda. The salt is loved by locals and visitors alike, as well as many of the island’s top chefs. And the process leaves Hooper continuously checking water levels in evaporation pans and checking on the salt drying. He’s involved in every aspect of production, even in packaging the salt. “I love salt and am very inquisitive,” he says. “I wanted to make my own. Once I tried, I wanted to make it better, so I kept going — and I’m still learning.” But now, as the salt maker behind Bermuda Artisan Sea Salt, he has big plans for expansion. “We need to expand as we currently are,” he notes. “This summer our capacity should be up by 20x minimum. This means more sales locations and restaurants in the coming months.” And for visitors and locals alike, this means one thing: more opportunities to enjoy the salt of Bermuda.
